INGREDIENTS
3 small lobster tails
2 tbsp (30mL) olive oil
1 white onion, quartered
1 large celery stalk, coarsely chopped
1 carrot, peeled and sliced
1 head garlic, sliced widthwise
1 tomato, sliced
2 tsp (4g) dried tarragon
6-8 sprigs of thyme
3 bay leaves
1⁄2 tsp (1g) ground black pepper
1⁄2 cup (120mL) brandy
1⁄2 cup (120mL) sherry
1 cup (240mL) bottled clam juice
1⁄2 - 3⁄4 cup (113-169g) tomato paste
1⁄2 cup (120mL) heavy cream
1 tbsp (7.5g) cornstarch
1 tbsp (15mL) water
1⁄2 tsp (3g) salt + additional to taste
Freshly ground black pepper to taste
Freshly Chopped Chives for garnishment
